{ Alisa and Pote ...... opened NoodleSwing during the past year with a love for fine
food,good company and a gracious sense of humor.  Pote, who holds a PhD .....from UNT,
only recently left TI for his new found love as a restaurateur....  Alisa is very much at home
running the family businesses, which include another, Japanese style restaurant in
Richardson.  She holds an MBA and was formerly a financial manager with the Santa Fe
Railroad system.
"It is a good match" Pote says.  "My wife can manage the books and keep us going in the
right direction fiscally and she has a fabulous memory , so she remembers everyone's
name that comes in, ......
"My first goal is to serve only the highest quality foods.  I will never put a plate before a
guest that I would not willing to eat myself.  I want people to know when they come in that
we love people and share their interest  in good food, and the good life....  We don't have
customers, we have guests!  We want to know what they think, and how we can do things
better.  We also aim for the best possible service for our guests and work hard to have a
friendly, well educated staff who will make you feel at home,"  Pote says.
"I think the freshness of our food is very important," Alisa adds. ".......We create complex
dishes that are authentic to Thailand; we made our own sauces from scratch and even in
the process of bottling some of them because our guests are constantly asking where they
can get them...."

Drunken Master ........ It is exceptional.  Possibly the best I have had since my last visit to
San Francisco. For the trevia fans out there, the traditional name of the dish is "pad kee
mow," but you will just call it delicious.
This is a place to visit with my full recommendation.  I (Rick) have enjoyed Thai food in
Bangkok, San Francisco and New York, and this is as good as it gets. }
